Mexicans in Iowa

Dear Brother, 
Thank you for making my parents so proud. We were the only Mexican Americans attending  Orientation day in Iowa. People were looking at us funny for speaking Spanish. It made me speak more Spanish. 
Never Forget you are part of that low percent of Mexican kids that makes it into Medical School. I know I always remind you of how I made you take Spanish instead of French in H.S. But those Spanish classes will come in handy. One day you will help many people. Till then I'm glad you took the pressure from us to become a doctor or a Lawyer.

How to make Horchata

I think my favorite drink of all time is Horchata,  I wish it was always homemade and never from a machine.  Here is my recipe. I'm not really a measure kind of girl, So I found this measured one from Lola and modified it a little. Enjoy!



  • 1 cup uncooked white long-grain rice
  • 5 cups water
  • Nestle Milk (La Lechera) sweet condensed milk. 
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon ground cinnamon
Sugar as Needed ( I love pure cane sugar, Azucar Morena)

Directions

  1. Pour the rice and water into the bowl of a blender; blend until the rice just begins to break up, about 1 minute. Let rice and water stand at room temperature for a minimum of 3 hours.
  2. Stir in 1 tablespoon of Lechera.
  3. Strain the rice water into a pitcher and discard the rice. Stir the milk, vanilla, cinnamon, and sugar into the rice water. Chill and stir before serving over ice.
